Quick Rice Pudding

Ingredients
1/4 cup water
1/4 cup raisins
2 tablespoons honey
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups cooked brown or white rice
1/4 cup unblanched almonds, coarsely chopped
1 carton (8 oz.) vanilla lowfat yogurt
Directions
Bring water, raisins, honey, cinnamon and salt to boil; stir in rice and almonds. Spoon into a 1-quart serving dish; set aside 10 minutes to cool. Fold in yogurt. Serve warm or refrigerate and serve chilled. Makes 4 servings.
Each serving contains 238 calories; 5 gm fat; 77 mg sodium; 3 mg cholesterol.
