Wild, Brown and Arborio Rice Stuffing
Ingredients
1/4 pound turkey sausage
1/2 cup butter or margarine
1 large onion, chopped
1 cup celery, chopped
1 cup Golden Delicious apple, unpeeled and chopped
1/2 cup dried mushroom slices or 1 cup fresh mushroom sliced
1/2 cup dried cherries
2 teaspoons dried thyme
1 small turnip, peeled and chopped
1 cup wild rice
1 cup long-grain brown rice
1 cup arborio rice
6 cups hot chicken broth
1 1/2 teaspoons salt or to taste
1/2 cup parsley, chopped
Directions
Brown sausage; add butter to melt. Add onion, celery, apple, mushrooms, dried cherries, thyme and turnip; cook until softened.
Add rices and stir to coat. Add chicken broth and salt; bring liquid to boil. Reduce heat and simmer 20 minutes or until most of the moisture is absorbed and rice is tender. Add parsley; adjust seasoning. Serve with roast pork or poultry. Makes 8-10 servings.
Each serving contains 379 calories; 14 gm fat; 1661 mg sodium; 31 mg cholesterol.
