Toasted Coconut Pear Bread

Ingredients

Preparation time: 20 minutes plus baking time
Yield: 1 loaf or about 10 slices

1 1/4 cups coconut
1 cup sugar
1 1/2 cups canned pears, mashed or 1 can (29 oz.)
1/4 teaspoon orange rind
1 teaspoon vanilla
1 egg
2 1/2 cups flour
2 1/2 teaspoons baking powder
1/8 teaspoon nutmeg
1/2 teaspoon salt
1/2-1 cup nuts, chopped


Directions

Preheat oven to 350 degrees. In shallow pan, toast coconut for 5-7 minutes, stirring once; set aside. Grease bottom only of 9-by-5-inch or 8-by-4-inch loaf pan.

Cream sugar, pears, orange rind, vanilla and egg until well mixed. Add dry ingredients (except coconut and nuts); stir by hand until dry ingredients are moistened. Blend in coconut and nuts. Pour into prepared pan; bake at 350 degrees for 55-75 minutes. Cool 5 minutes; remove from pan and cool completely before serving.

Each serving contains 215 calories; 9 gm fat; 203 mg sodium; 21 mg cholesterol.
