Ingredients

1 1/2 pounds boneless bottom round, cut into 1-inch chunks
6 large potatoes, peeled and cut into 1-inch chunks
2 medium onions, cut into 1-inch chunks
5 cloves garlic, minced
2 medium tomatoes, chopped
2 tablespoons fresh ginger root, minced
3 cups water
2 tablespoons vegetable oil
2 teaspoons turmeric
1 tablespoon curry powder
2 tablespoons salt
1/4 teaspoon sugar


Directions

Cover bottom of large pot with oil. Saute onions and tomatoes. Add spices, salt, beef and 2 cups of the water. Cover and simmer for 30 minutes. Add sugar, the remaining 1 cup of water and potatoes. Simmer 30 minutes more. Makes 8 servings.
