Dried Apple Pudding Cake

Ingredients
2 cups water
1 1/2 cups dried apples, diced
2 cups sugar
1/2 cup shortening
2 eggs
1 cup nuts, chopped
1 teaspoon vanilla
2 cups flour
2 teaspoons soda in 1/4 cup hot water
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
Directions
1 cup raisins, optional Simmer apples in water until tender; set aside. In mixing bowl, cream sugar, shortening and eggs. Add apples, nuts and vanilla. Mix in dry ingredients. Pour into a 9-by-13-inch pan; bake at 350 degrees for 35-40 minutes. Serve hot topped with ice cream, whipped cream or lemon sauce. Makes 16 servings.
Each serving contains 285 calories; 11 gm fat; 291 mg sodium; 14 mg cholesterol.
