Peach Cobbler
Ingredients
Preparation time: 30 minutes plus baking
Yield: 9 servings
7 cups peaches, peeled and sliced
1/2 cup sugar
2 tablespoons flour
1 tablespoon lemon juice
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup water
2 tablespoons butter
Batter:
1/2 cup flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter
1 egg, slightly beaten
Directions
Combine all ingredients except butter to make filling. Turn into 8-inch square pan; dot with butter. Combine ingredients for batter; beat until smooth. Drop in 9 portions over peach filling. Bake at 375 degrees for 35-40 minutes. Serve warm with cream or ice cream.
Each serving contains 179 calories; 6 gm fat; 126 mg sodium; 37 mg cholesterol.
