Fresh Peach Pie

Ingredients
Preparation time: 20 minutes plus chilling
Yield: 8 servings
1 cup water
1 cup sugar
5-6 tablespoons cornstarch
2 tablespoons lemon juice
2 tablespoons butter
1 cup fresh peaches, mashed
1 cup fresh peaches, sliced
1 pie crust
Directions
Combine water, sugar, cornstarch and lemon juice in small saucepan. Stir constantly; boil until thick. Remove from stove; add 2 tablespoons butter and cool. Add fruit and pour into pie shell. Chill and serve with whipped cream if desired.
Each serving contains 255 calories; 9 gm fat; 92 mg sodium; 13 mg cholesterol.
