Mrs. Ethington's Old-Fashioned Muffins
Author: "The Pioneer Cook Book"
Ingredients
2 cups uncooked oatmeal
1 1/2 cups sour milk
1/3 cup sugar
1/4 cup melted shortening
1 egg, well beaten
1 teaspoon soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup flour
Directions
Pour sour milk over oatmeal; allow to stand a few hours or overnight. Combine sugar, shortening and egg; add to oatmeal mixture. Sift together remaining dry ingredients; blend. Bake in greased or paper-lined muffin tins at 400 degrees for 20 minutes. Makes 18 muffins.
Each serving contains 110 calories; 4 gm fat; 131 mg sodium; 6 mg cholesterol.
