Poseidon's Fish Soup

Ingredients

This recipe, for babies aged 12 to 18 months, was given to Linardakis by Angelina Nepolis of Elko, Nev.

6-ounce fish fillet, deboned (Dover sole or halibut)
2 carrots, peeled and chopped
2 celery stalks, chopped
1 medium tomato
1 cup uncooked white rice
2 tablespoons olive oil


Directions

Place all ingredients in pot with enough water to cover. Cook 30 to 45 minutes or until all ingredients are tender. Separate vegetables and fish from broth; mash with fork or puree in blender and serve to baby. Serve the remainder as a thick soup.
