Summer Fruit and Rice Salad

Ingredients

1 cup white rice
1 (8-ounce) carton banana or peach low-fat yogurt
1 tablespoon honey
1 ripe banana, sliced
2 cups diced or sliced fresh fruits and berries
1/4 cup chopped pecans, toasted Yield: 6 servings
Prep time: 20 minutes, plus chilling


Directions

Cook rice according to package directions, omitting butter and salt. Transfer rice to large bowl and cool slightly. Combine yogurt and honey. Stir into rice. Cover and chill. Just before serving, stir in fruit and pecans.
