Chocolate Beet Cake

Ingredients
Preparation time: 15 minutes plus baking
Yield: 12 servings
1 can (16 oz.) beets, pureed with liquid, about 2 cups
4 eggs
1 1/2 cups vegetable oil
2 cups sugar
2 1/2 cups flour
2 teaspoons baking powder
2 teaspoons salt
4 tablespoons cocoa
1 1/2 teaspoons vanilla
Chocolate or German chocolate frosting
Directions
Puree beets with liquid; set aside.
Cream sugar, oil and eggs together. Fold in dry ingredients then vanilla. Fold in beet mixture. Pour in lightly greased 9-by-13-inch pan; bake at 375 degrees for 35-40 minutes. Cool and frost with icing of choice.- Each serving, without frosting, contains 483 calories; 29 gm fat; 184 mg sodium; 71 mg cholesterol.
