Baked Beets

Ingredients
Preparation time: About 1 hour, depending on size of beets
Yield: 4 servings
4 medium-large size beets
4 slices lemon
Sour cream
Butter
Directions
Wash beets thoroughly; remove tops leaving a 1-inch stalk. Wrap each beet in foil; place in a pan to catch juices. Bake at 375 degrees for about one hour.
When done, carefully slip skins, tops and root end from beets; wear gloves if desired. Serve hot with butter, sour cream and lemon as you would a baked potato.
Each serving contains 46 calories; 3 gm fat; 33 mg sodium; 7 mg cholesterol.
