Beet Pickles

Ingredients
Preparation time: 10 minutes plus chilling
Yield: 4-5 pints
1 cup water
2 cups apple cider vinegar
3 cups sugar
2 tablespoons pickling spice
4-6 whole cloves
1 stick cinnamon
4-5 cans (16 oz.) whole beets
Directions
Make a syrup of water, sugar, vinegar; Tie pickling spice, cloves and cinnamon stick in a cheesecloth bag. Bring to a full boil; remove from heat and add small whole beets. Let stand in heated syrup until cool. Pack in jars, with syrup covering beets and refrigerate.
