Pea Salad

Ingredients

Preparation time: 10 minutes plus chilling
Yield: 6-8 servings

1 package (10 oz.) frozen peas, cooked and cooled or 1 1/2 cups fresh peas
1 large carrot, grated
2 cups celery, chopped
2 cups cauliflower, pieces in florets
1 cup green pepper, chopped
1/4 cup green onion, chopped
1/2 cup Cheddar cheese, grated
1 cup ranch salad dressing


Directions

Mix all ingredients except cheese; toss with dressing. Chill thoroughly; garnish with grated cheese.

Each serving contains 111 calories; 0 gm fat; 511 mg sodium; 0 mg cholesterol.
