Cantaloupe Chicken Salad

Ingredients

Dressing:
3 tablespoons oil
1 1/2 tablespoons orange juice concentrate
1 tablespoon white wine vinegar
1 1/2 teaspoons salt

Salad:
3 cups chicken, cooked and cubed
2 cups rice, cooked and chilled
1 cup seedless green grapes
1 cup celery, diced
1 can (8 oz.) chunk pineapple in its own juice, drained
1 can (11 oz.) mandarin orange segments, drained
1 cup mayonnaise or salad dressing
1/2 cup slivered almonds, toasted
3 cups cantaloupe, cubed


Directions

Combine oil, orange juice, vinegar and salt; blend well. Add chicken; stir to coat. In large bowl, combine rice, grapes, celery, pineapple, mandarin oranges and mayonnaise; blend well. Add chicken mixture to rice mixture; mix well. Cover; refrigerate until thoroughly chilled. Makes 6-8 servings.

Each serving contains 383 calories; 29 gm fat; 473 mg sodium; 48 mg cholesterol.
