Vegetarian Salad

Ingredients

Dressing:
1 cup mayonnaise
3 tablespoons sugar
1 tablespoon rice wine vinegar

Salad:
3 tablespoons Bermuda onion, diced
1/2 cup golden raisins
1 large stalk broccoli in florets, about 4 cups
1/2 cup cashews


Directions

Combine ingredients for dressing; set aside.

Dice onion; combine with raisins, broccoli florets and cashews. Toss with dressing and marinate overnight. Makes about 6 servings.

Each serving contains 237 calories; 16 gm fat; 534 mg sodium; 0 mg cholesterol.
