Chinese Rice Cake (Nian Gao)
Ingredients
Most Chinese New Year dishes have names that sound like something fortunate, and New Year rice cake (Nian Gao) sounds like "advancement" or "promotion" in Chinese.
3 eggs
2 cups sugar
1 pound glutinous rice flour
2 1/2 cups milk
1 teaspoon baking soda
1/3 cup vegetable oil
1 tablespoon vanilla extract
Directions
Beat eggs with sugar and slowly add glutinous rice flour and milk. Stir the mixture until the ingredients are fully blended with each other before adding baking soda. Add oil gradually while stirring continuously. Stop when oil no longer appears as a separate layer from the rest of ingredients. Add vanilla extract last. Stir and make sure there is no air bubbles. Apply some oil at the bottom and sides of the baking pan before pouring the dough into it. Bake at 350 degrees for 50 minutes.
