Rhubarb Kuchen
Ingredients
Preparation time: 10 minutes plus baking
Yield: 12 servings
1/2 cup butter or margarine
1/4 cup brown sugar
2 1/4 cups flour
Pinch of salt
3 teaspoons baking powder
2/3 cup milk
1 egg, slightly beaten
4 cups rhubarb, diced
1 package (3 oz.) strawberry or raspberry gelatin
Streusel Topping:
1/2 cup flour
1 cup sugar
1/4 cup butter or margarine
Directions
Cut butter or margarine into brown sugar, salt, flour and baking powder. Add milk and egg. Press dough into a lightly greased 9-by-13-inch pan. Cover with rhubarb; sprinkle with dry gelatin, then streusel mixture. Bake at 350 degrees for 45 minutes.
For streusel, cut butter or margarine into flour and sugar mixture until crumbly.
