Shrimp Aspic

Ingredients

Preparation time: 15 minutes, plus setting time
Yield: 6-8 servings

1 package (3 oz.) lemon gelatin
1 cup tomato juice, boiled
1 cup tomato juice, cold
Juice of 1/2 lemon
2 tablespoons Worcestershire sauce
1 can (6 oz.) shrimp
1 cup celery, chopped
1 small onion, finely chopped
1 cup pimento-stuffed green olives, sliced


Directions

Dissolve gelatin in hot tomato juice. Add cold tomato juice, lemon juice, Worcestershire sauce and onion. Refrigerate until partially set. Add shrimp, celery and olives; mix thoroughly. Chill until firm.

Each serving contains 42 calories; 2 gm fat; 438 mg sodium; 19 mg cholesterol.
