Cucumber Tomato Slaw

Ingredients

1/2 head white cabbage, julienned
2 medium size seedless cucumbers, julienned
4 roma or yellow tomatoes, seeded and julienned
1 bunch chives, chopped

Julienne cabbage, peel and julienne cucumber, julienne tomatoes (first remove seeds or pulp), chop chives. Toss all vegetables together.

Slaw Dressing:
1 cup plain yogurt
4 teaspoons white vinegar
1 teaspoon lemon juice
1/2 teaspoon white pepper


Directions

Mix all ingredients, toss with the vegetables. Let sit one hour; will not last overnight.
