Tomato Barbecue Sauce

Ingredients

2 ounces olive oil
1 onion, small diced
2 garlic cloves
30 roma tomatoes, peeled and seeded
1 1/2 cups tomato juice
1/2 cup white balsamic vinegar
1/2 cup white wine
4 tablespoons Worcestershire sauce
15 drops Tabasco
2 bay leaf
1/8 teaspoon ground clove, or 1 whole clove (do not overdo)
1 teaspoon kosher salt
1 teaspoon black pepper
1 cup diced tomatoes


Directions

Saute onions and garlic in oil until tender. Add all ingredients, except the 1 cup diced tomatoes, and simmer 1 hour. Remove bay leaf and puree. Add the diced tomatoes, adjust salt and pepper to taste.
