Honey Almond Crunch
Author: AP/Dvorah Buhr
Ingredients
1 cup unsalted butter
1 1/2 cups sugar
1/2 cup water
1/3 cup honey
2 cups raw almonds
Directions
In a saucepan, melt the butter. Add the sugar, water and honey; cook to 220 F on a candy thermometer. Add the nuts and stir while you cook the mixture to the hard-crack stage, 300 F heat.
Meanwhile, spray a 14-by-17-inch baking sheet with nonstick spray. When the toffee has reached the required temperature, pour it out into the pan. Allow to cool, then break into pieces and store in an airtight container.
