Ingredients
Note: You can substitute raw potatoes. Cook them with the 1/4 cup water over medium heat until softened before adding the onions and peppers.
1 large onion, diced
1 green or red pepper, diced
2 cups shredded or diced pre-cooked potatoes
1/4 cup water
1/2 cup to 2 cups leftover cooked meat, diced
Salt and pepper to taste
1/2 cup diced tomatoes, optional
Directions
Lightly spray a large skillet with a non-stick spray. Add onions, pepper and potatoes and 1/4 cup water. Over medium heat, toss lightly for about 5 minutes until the onions are soft and golden. Add the diced meat, any salt and pepper, toss for 2 to 3 minutes to blend and heat the meat, and serve.
