Microwave Chili Con Chicken

Ingredients

1 1/2 pounds boneless skinless chicken breast
6 tablespoons lemon juice
2 teaspoons olive oil
4 cloves garlic, minced
4 medium onions, sliced
4 bell peppers (red and green), thinly sliced
4 teaspoons finely chopped jalapeno chili
2 teaspoons ground cumin
3 teaspoons dried oregano leaves
Salt and pepper to taste
Finely chopped parsley or cilantro as garnish


Directions

Cut chicken into 1/2-inch strips and sprinkle with lemon juice. Set aside. Combine oil, garlic and onions in large glass casserole dish. Microwave, uncovered, at high power for 2 minutes. Stir in remaining ingredients, except salt, pepper and parsley. Microwave, covered, at high power 3 to 4 minutes. Stir in chicken; microwave, loosely covered, at high power until chicken is cooked, 5 to 10 minutes, stirring halfway through cooking time. Season with salt and pepper and sprinkle with parsley. Serves 4.
