Mock Tuna Salad Sandwich

Ingredients

15-ounce can garbanzo beans
1 stalk celery, finely chopped
1 carrot, grated (optional)
1 green onion, finely chopped
2 teaspoons vegan mayonnaise (such as Nayonnaise)
1 tablespoon sweet pickle relish
1/4 teaspoon salt, optional


Directions

Mash garbanzo beans with a fork or potato masher. Leave some chunks. Add celery, carrot, onion, vegan mayonnaise and relish. Add salt to taste. Serve on whole-wheat bread or in pita bread with lettuce and sliced tomatoes. Makes 4 sandwiches.
