Beananza Bars

Ingredients

1/2 cup all-purpose flour
2/3 cup packed light brown sugar
2/3 cup oats (the type of oats doesn't matter)
1 cup natural wheat/barley cereal such as Grape-Nuts, or 1 2/3 cups low-fat granola
1 15-ounce can (or 1 1/2 cups cooked) pinto or Great Northern beans, rinsed and drained (can be mashed)
3/4 cup raisins
1 cup flaked coconut
1/2 cup chopped walnuts or almonds
3/4 cup chopped dates
7 tablespoons melted margarine
1/2 cup honey
1 teaspoon vanilla
1 teaspoon ground cinnamon
1/8 teaspoon salt


Directions

Combine flour, brown sugar, oats, cereal, beans, raisins, dates, coconut and walnuts (or almonds) in a large bowl. Add remaining ingredients; mix well. Press mixture evenly into greased 13-by-9-inch pan. Bake at 350 degrees for 20-25 minutes or until bars are browned and firm to touch in the center. Cool completely before cutting. Makes 32-36 bars.
