Thai Chicken Marinade

Ingredients

2 tablespoons peanut oil
2 tablespoons chunky peanut butter
1 1/2 tablespoons pepper sauce
1 tablespoon lime juice
1 tablespoon soy sauce
1 tablespoon minced fresh ginger
1 clove garlic, minced
2 teaspoons curry powder
1 pound boneless, skinless chicken breasts
Scallion for garnish


Directions

Combine first eight ingredients in large glass or plastic bowl. Cut chicken along grain into 1/2-inch wide strips; toss in marinade. Cover and refrigerate 2 hours to overnight. Preheat grill or broiler to medium-high. Thread chicken strips lengthwise onto skewers. Grill just until cooked through, about 5 minutes. Serves 4.
