Basic Slow-Grilled Ribs

Ingredients

1-2 slabs pork back ribs or spare ribs
Rub (see recipes below)
Favorite barbecue sauce

Prepare medium fire in grill. Rub ribs with desired seasoning. Place ribs in single layer opposite heat source on grill. Cover grill; allow ribs to cook slowly for 1 1/2 to 2 hours. Baste with sauce during the last 20-30 minutes of cooking. Remove ribs from grill; cut into serving portions. If desired, wrap ribs in heavy aluminum foil; place in a heavy brown paper bag. Let the ribs rest for an hour, then serve. (This resting renders the ribs extra-tender.) Plan on 1 pound of uncooked ribs per serving.

Memphis-Style Ribs: Mix 2 tablespoons each garlic powder, onion powder, white pepper, seasoned pepper, chili powder, cumin and brown sugar; 4 tablespoons paprika, and 2 teaspoons cayenne pepper to rub on ribs. Baste with apple cider during cooking.

Texas-Style Rub: Rub ribs with ground black pepper. Baste toward end of cooking time with smoky barbecue sauce that has a minced jalape?o chili stirred in.

Southern Comfort: Mix together 6 tablespoons paprika, 4 teaspoons each garlic powder and seasoned salt, 2 teaspoons each dry mustard and oregano, and 1 teaspoon chili powder. Rub on ribs. Baste toward end of cooking time with a mild barbecue sauce that has 2 tablespoons of spicy brown mustard and a little molasses or bourbon added.

Kansas City Style: Mix 1 cup of sugar, 1/2 cup paprika, 4 tablespoons each seasoned salt, garlic salt, celery salt, onion salt, and chili powder; 2 tablespoons lemon pepper, 2 teaspoons each dry mustard and ground sage, and 1 teaspoon cayenne pepper. Toward end of cooking time, baste with a smoky barbecue sauce.
