Ingredients

For those who don't have the time or patience to tend a grill for a couple hours.

2-3 pounds boneless pork ribs
1 teaspoon freshly ground pepper
1 teaspoon salt
1 tablespoon seasoned salt (optional)
1 teaspoon paprika
1/2 onion, sliced
1/2 green pepper, sliced
1 teaspoon garlic powder
2 cups water
1 bottle favorite barbecue sauce (K.C. Masterpiece preferred)

Directions

Place ribs in slow-cooker with spices, onion, pepper, garlic and 2 cups water. Cook on low with lid on for 5-6 hours, or until ribs are tender (but not mushy), and much of the fat is melted. Lift out ribs and place on oiled grill over medium-high heat. (If meat is starting to break apart, you will need a grate or rack with small holes to keep small chunks of meat from falling through, or foil punched with small holes.) Grill about 5 minutes per side, so that the meat is browned and a little crispy on the outside. (Watch for flare-ups from dripping fat.) At the end of cooking, slather generously with barbecue sauce to keep ribs from drying out. Serve with more sauce.
