Pepper Steak

Ingredients

1 pound lean beef steak (round or sirloin)
2-3 teaspoons paprika
1 clove garlic, crushed
1 small slice fresh gingerroot (optional)
1 tablespoon plus 1/4 cup soy sauce, divided
2 tablespoons butter
1 1/2 cups beef broth
1 cup sliced onion
1 green pepper, sliced
1/2 cup sliced celery
1/2 cup sliced mushrooms
1/4 cup water
2 tablespoons cornstarch
1 large fresh tomato, cut in wedges
Cooked rice


Directions

Slice beef very thin and marinate with mixture of paprika, garlic, gingerroot and 1 tablespoon soy sauce for 1/2-1 hour. Brown meat in butter in large skillet. Add broth and simmer 30 minutes. Lightly stir-fry vegetables in small amount of hot oil and add to beef.

Blend 1/2 cup soy sauce, water and cornstarch. Add to meat mixture and simmer until thick and clear. Add fresh tomato wedges. Heat through. Serve over rice. Recipe from "Favorite Recipes from Utah Farm Bureau Women."
