Heather's Mexican Roll-Up

Ingredients

1/4 pound extra-lean ground turkey (or ground beef)
1 whole-wheat, low-carb flour tortilla
1 tablespoon fat-free sour cream
1/3 cup shredded romaine lettuce leaves
1/3 cup seeded, chopped tomato
2 tablespoons thick-and-chunky salsa


Directions

Place a small nonstick skillet on medium high heat until it's hot enough for a spritz of water to sizzle on it. With an oven mitt, briefly remove the pan from the heat to mist lightly with oil spray.

Add turkey or beef to the pan. Cook, breaking into chunks with a wooden spoon 3-4 minutes, or until lightly browned. Transfer turkey or beef to a plate. Cover to keep warm.

Return pan to medium heat. Place tortilla in the pan. Cook about 30 seconds per side, until just warmed. Transfer to serving plate. Starting at one side, spread sour cream evenly over 2/3 of tortilla. Scatter reserved turkey or beef over the sour cream. Top with lettuce, tomato and salsa. Starting at the filled end, roll tortilla tightly into a tube. Serves 1.

Note: Devin Alexander suggests spiking the turkey with 1 1/2 teaspoons of salt-free Mexican seasoning such as Mrs. Dash Southwest Chipotle Seasoning during cooking.
