Ingredients
4 tablespoons butter, softened
8 slices cracked wheat bread
8 slices pepper Jack cheese
4 ounces thinly sliced peppered roast beef or pastrami
8 slices cooked bacon
Directions
Spread butter evenly on one side of each slice of bread. On the unbuttered sides of four slices of bread, layer two slices of Jack cheese. Place one-fourth of the roast beef and 2 slices bacon over cheese, and top with the remaining slice of bread, buttered side out.
Preheat a large skillet or griddle over medium-low heat. Cook sandwiches in batches, if necessary, for 4-5 minutes per side, or until golden and the cheeses are melted. Serve immediately. Serves 4.
