Poached Pears or Apples

Ingredients

4 Granny Smith apples or 4 firm pears, pealed and placed in water with 1-2 tablespoons lemon juice
1 cup sugar
3 cups water
1 cup port for apples or
1 cup chablis for pears or
1 cup fruit juice
1/2 stick cinnamon
1/8 teaspoon allspice


Directions

Fresh Pear Sauce:

3 tablespoons sugar

6 tablespoons water

1 teaspoon lemon juice

4 pears, peeled, cored and coarsely chopped

In large saucepan, combine water, wine or juice, cinnamon, allspice; bring to a boil. Reduce heat to a very slow simmer. Add fruit and continue to simmer until fruit is tender but firm. Remove from heat and cool in cooking syrup. Serve with fresh pear sauce.

For sauce, bring sugar and water to a boil; boil for 1 minute and remove from heat. Add chopped pears to food processor; add sugar syrup and lemon juice. Pulse until pureed. Makes 4 servings.

Each serving, with 1/2 cup sauce, contains 449 calories; 1 gm fat; 3 mg sodium; 0 mg cholesterol.
