Ingredients
Preparation time: 25 minutes plus baking and chilling time.

Directions
Crust:
1 cup granola (made with fruit juice as a sweetener, if required)
2 tablespoons butter, melted
Filling:
2 packages unflavored gelatin
1/2 cup cold water
1 can (20 oz.) crushed pineapple
2 packages (8 oz.) cream cheese, softened
1 tablespoon vanilla
1 cup light whipping cream
1/4-1/3 cup sugar (add if not on a sugar-restricted diet)
For crust, crush granola and toss with butter. Press into the bottom of 9-inch springform pan. Bake at 375 degrees for 10 minutes. Cool.
For filling, sprinkle gelatin over cold water; allow to set for 5 minutes to soften. Over low heat, dissolve gelatin until clear. Whip pineapple with juice in a blender until smooth. Add cream cheese and vanilla; beat until smooth. Pour in dissolved gelatin; chill until thickened but not set. Remove from refrigerator and beat lightly. Fold in whipped cream; spoon into chilled crust. Refrigerate until set, overnight if possible. Garnish with additional granola or fruit of choice.
