Ingredients
1/2 cup cottage cheese
1 tart apple, peeled and cored
2 tablespoons sugar
30 ginger snaps
Directions
Pulse apple in food processor to dice; blend in cottage cheese and sugar. Spread apple filling on flat side of cookie, topping it with another ginger snap to make a sandwich. Makes 15 sandwiches.
