Carolina Chicken Saute

Ingredients

1 large (orange) sweet potato, peeled, cut lengthwise, thinly sliced
1 green bell pepper, thinly sliced
1 small onion, cut into rings
1 medium Golden Delicious apple, unpeeled, thinly sliced
3/4 cup orange juice
2 tablespoons brown sugar
2 teaspoons cornstarch
1 teaspoon curry powder
1/4 teaspoon salt
2 whole boneless chicken breasts (4 breast halves), cut into 1-inch pieces
Salt and pepper
3 tablespoons cooking oil, divided


Directions

Yield: 5 servings

Prep time: 45 minutes

Prepare vegetables and apple; set aside. In a measuring cup, combine orange juice, brown sugar, cornstarch, curry powder and salt. Stir well to combine; set aside.

Season chicken with salt and pepper. Heat 2 tablespoons oil in a large nonstick skillet or wok. Stir-fry chicken over medium-high heat 4 to 5 minutes or until done. Remove chicken with a slotted spoon; set aside.

Add remaining 1 tablespoon oil and sweet potatoes; stir-fry 2 minutes. Add onions and bell pepper; stir-fry 2 minutes. Add apples to skillet and cook 2 to 3 more minutes, or until sweet potatoes are done. Return chicken to skillet. Pour in orange mixture and continue cooking 1 to 2 minutes until sauce is thickened.
