Ingredients
8 chicken breasts, boned and skinned
Salt
Freshly ground black pepper
1/2 cup apricot preserves
2 teaspoons cream style horseradish
1 1/2 tablespoons soy sauce
3 cups hot cooked rice
1 tablespoon butter or margarine, melted
2 tablespoons chives, chopped
Directions
Sprinkle chicken pieces with salt and pepper. Place in baking pan. Cover and bake at 400 degrees for 45 minutes. Blend preserves, horseradish, soy sauce and pan drippings. Pour over chicken and continue baking uncovered 15 minutes. Combine rice, butter and chives; toss lightly. Serve chicken and sauce with chive rice. Makes 4 servings.
