1/2 cup chopped bacon
1 medium-size onion, chopped
3 medium-size boiled potatoes, diced
4 large hard-cooked eggs, diced
1/2 cup Cheddar cheese cubed
1/2 cup mayonnaise
2 teaspoons prepared mustard
Salt and pepper to taste
Brown chopped bacon in 8-inch skillet, stirring until crisp. Remove bacon to a large bowl. Add onion to bacon drippings; cook until limp then add to bacon.
Combine remaining ingredients; stir until evenly mixed. Adjust seasonings; chill before serving.
