Ingredients
1 (14 1/2-ounce) can chicken broth
1 1/2 cups diced fresh broccoli
1 medium onion, chopped
1/4 teaspoon seasoned salt
Grinding of black pepper
1/4 teaspoon curry powder (or more)
1 (6 1/2-ounce) can chunk tuna packed in water, drained (or chopped, cooked chicken)
1 1/2 cups low-fat milk
1/2 to 1 cup instant mashed potato flakes
Directions
Have chicken broth coming to a boil in a large saucepan. Add chopped onion and broccoli. Add salt, pepper and curry. Bring to a boil, cover and reduce heat. Cook 10 minutes or until vegetables are soft.
Stir in drained tuna, divided into small chunks; stir in milk and heat. Stir in 1/2 cup mashed potato flakes, cover and heat for a few minutes. Check for seasoning and stir in more potato flakes if necessary for a thicker mixture. Serve in shallow soup bowls. Makes four generous servings.
