Tortilla Casserole

Ingredients

Preparation time: 30 minutes plus baking
Yield: 8-10 servings


Directions

4 chicken breasts, cooked and chopped

2 tablespoons chicken stock

1 dozen tortillas, cut into 1-inch squares

1 can (10 oz.) cream of mushroom soup

1 can (10 oz.) cream of chicken soup

1 cup milk

1 can green chile salsa

1 small onion, chopped

1 pound Cheddar cheese, grated

Mix soups, milk, salsa and onion. Layer as follows: 1/2 tortilla chips, 1/2 chicken. 1/3 cheese, 1/2 soup mixture; repeat, then top with remaining cheese. Bake 1 hour at 350 degrees.

Each serving contains 524 calories; 28 gm fat; 1178 mg sodium; 114 mg cholesterol.
