Peachy Chicken Salad

Ingredients

Preparation time: About 30 minutes plus cooking time for chicken
Yield: 6-8 servings


Directions

1 cup brown rice, cooked

2 cups chicken, cooked and diced

1/2 cup celery, diced

1/2 cup green pepper, diced

1 1/2 cups peaches, peeled and sliced

1/4 cup walnuts or almonds, chopped

1/4 cup mayonnaise

1 tablespoon onion, finely chopped

1 tablespoon lemon juice

Lightly toss rice, chicken, celery, green pepper, peaches and nuts. Make dressing of mayonnaise, onion and lemon juice; blend into chicken mixture. Chill thoroughly. Garnish with toasted nuts.

Each serving contains 241 calories; 12 gm fat; 113 mg sodium; 46 mg cholesterol.
