1 pound firm tofu
1 to 1 1/2 teaspoons turmeric
2 tablespoons cider vinegar
1/4 teaspoon curry powder
1/4 cup mayonnaise, or soy mayonnaise
1/4 teaspoon salt
1 teaspoon Dijon mustard
1/2 teaspoon diced onion or chives
For best results, place all ingredients except the onion or chives in a food processor and pulse until smooth. Stir in the onion or chives and serve.
Alternatively, crumble the tofu very finely in a medium bowl and mix in remaining ingredients.
