Beets with Sour Cream

Ingredients

Preparation time: About 30 minutes, depending on size of beets
Yield: 5 servings


Directions

5 medium fresh beets

1 cup carrots, sliced

3 tablespoons butter or margarine

1 tablespoon fresh chives, minced

1/2 teaspoon salt

1/2 teaspoon dill weed

Pinch of pepper

Sour cream

Cook beets; remove skins and root ends. Cook carrots.

Melt butter; add chives, salt, dill weed and pepper. Add beets and carrots; cover and cook over medium heat, stirring occasionally until heated through. Serve with dollop of sour cream.

Each serving contains 108 calories; 8 gm fat; 407 mg sodium; 8 mg cholesterol.
