Pork and Grape Wraps

Ingredients

Directions

12 ounces lean pork, cut into thin strips (2-by-1/4-by-1/4-inch)

1/4 cup chopped onion

1 Anaheim chili pepper, seeded and chopped

1 clove garlic, minced

2 teaspoons vegetable oil

1 1/2 cups halved seedless grapes

1 cup prepared green chili salsa

1/2 teaspoon salt

1/2 teaspoon dried oregano leaves, crushed

1/8 teaspoon ground pepper

Six 8-inch flour tortillas

Saute pork, onion, chili pepper and garlic in oil until pork is no longer pink. Add grapes, 2 tablespoons green chili salsa, salt, oregano and ground pepper; saute mixture until thoroughly heated.

Wrap tortillas between two sheets of damp paper towels and microwave at HIGH (100 percent) about 1 minute or until warm.

Portion 1/2 cup mixture in a strip along center of each tortilla. Fold in sides and roll into a long bundle. Cut each wrap in half. Serve with remaining green salsa. Makes 6 servings.

Tip: For spicier filling, substitute Jalapeno for Anaheim pepper.
